Nathan Eiden - General Manager (Downtown)
Born in Daegu, South Korea, Nathan was adopted and moved to the United States when he was three months old, where he was raised in Louisville, Ky. He attended Trinity High School for boys, and went on to study Chemical Engineering at the University of Kentucky. Nathan has always enjoyed the busy lifestyle of the hospitality and service business, and is very excited to be working alongside Chefs/Owners Fernando and Yaniel Martinez and Owner Christina Martinez within the OLE! (Oh Let’s Eat!) Restaurant Company. During his off days, Nathan is usually spending the day with his wife, exploring the growing food and beverage industry throughout the city, or watching the latest flick. His favorite food is a grilled ribeye with a lager.
In 2014, Nathan joined our staff, first as a waiter at the original Mussel and Burger Bar. “At that time, I already had goals to move up to management. I remember being very anxious for my opportunity.” In the summer of 2015 he was given that opportunity, and became a Manager at Mussel and Burger Bar. When it comes to service, Nathan makes guest satisfaction the number one priority; second, is the happiness his staff. “Those two things are so closely tied together in the foundation our guests’ experience.” It wasn’t long before he was asked to take the role of General Manager and open the new location of Mussel and Burger Bar in Downtown Louisville. “I feel like there’s always something new I can learn and apply. Every day I just feel like I need to find the ‘something new’. I don’t believe every job grants this sensation. It’s my favorite part of this business.”
Fernando Martinez - Owner
Chef Fernando Martinez was born and raised in Habana, Cuba. He was inspired by watching his mother and grandmother cooking. It always fascinated him.
He came to the US in 1994, first living in San Diego and then moving to Louisville in 1996.
In 2002, he started his first restaurant – Havana Rumba Cuban Restaurant in St. Mathews. Shortly after that, he opened Mojito Tapas in Holiday Manor. While operaing Mojito, he attended Le Cordon Bleu culinary school in Paris France. After his return to the US, he decided to take a year off and continue learning. He moved to South America and traveled around…learning, eating, cooking. After a year, he returned to the U.S and moved to Miami, Florida where he worked as Sous Chef for one of his idols – Chef Douglas Rodriguez at the Astor and Hilton Bentley Hotel. After that, he worked as Executive Chef at Café L’Europe in Palm Beach.
In 2012 he come back home to Louisville and opened Guacamole, Mussel and Burger Bar, El Taco Luchador, Cena, and Artesano Tapas. Chef Fernando is constantly learning, challenging himself to perfect his craft. Now through his restaurant group, Olé Oh Let’s Eat, there is a lot more to come…
Yaniel Martinez - Owner
Yaniel was born and raised in Habana, Cuba. He was in charge of a large catering and food operation in Cuba. In 2007, he moved to Louisville, KY and helped open Mojito Tapas with his cousin Fernando Martinez. He then became the Executive Chef at Havana Rumba, and a partner in the Middletown location. He left in 2012 to partner up with Fernando and together they opened Guacamole, Mussel and Burger Bar, Cena, Taco Luchador and Artesano Tapas.
